Valuation as an area of study

In the chapter Looking at value-making: Cod and scientists swimming their own way, Kristin Asdal elaborates on the concept of valuation. Why is it a useful point of departure for studying the influence of documents on the context they work in? How do one go about using this concept in practical research? What is her perception of the role of scientists in this area of study?
